Low in calories, onions are fantastically useful in a wide range of dieter’s recipes, giving them a real flavour boost.

Onions are great detoxifiers, boosting immunity and cleansing the whole system. They also contain the flavonoid quercetin, an antioxidant that is believed to be key in blocking the formation of cancer cells. Onions are antibiotic and antiseptic and particularly good for the blood, having a thinning effect that prevents clotting, and lowering cholesterol.

ONION NUTRIENTS

Vitamins B1, B6, C, beta-carotene, folic acid; calcium, chlorine, copper, iron, magnesium, phosphorus, potassium, selenium, zinc; quercetin.

ONION SOUP

onion_soupIngredients:

  • 1 tablespoon olive oil
  • 450g onions, chopped
  • 2 cloves garlic, crushed
  • 1 carrot, chopped
  • 1 turnip, chopped
  • 570ml vegetable bouillon stock
  • 3 tablespoons soya sauce
  • 2 tablespoons chopped flat-leaf parsley
  • 1 tablespoon sesame seeds

Heat the oil in a saucepan and cook the vegetables very gently for 15 minutes. Add the bouillon and soya sauce, bring to the boil and simmer for 10 minutes. Serve sprinkled with parsley and sesame seeds.
