grapefruitsIt’s no wonder that grapefruit, low in calories and fat, tremendously tangy and highly detoxifying, is a firm diet-food favourite.

Grapefruits reduce cholesterol, boost energy and immunity, and are very cleansing. Long regarded as the dieter’s friend, they are not just low in calories. Recent research has shown that grapefruits can actually speed up weight loss by reducing insulin levels – one of the factors that make us feel hungry – which, in turn, makes us want to eat less.

CHICORY AND GRAPEFRUIT SALAD

Ingredients:

  • 1 grapefruit, halved
  • 250g chicory, chopped
  • 1 avocado, peeled, stoned and chopped
  • 2 tablespoons orange juice
  • 2 teaspoons olive oil
  • 1 teaspoon soya sauce

Cut half of the grapefruit into small pieces, removing the pith and pips. Mix together with the chicory and avocado in a bowl. Mix together the orange juice, olive oil and soya sauce and the juice from the remaining half of the grapefruit and pour over the salad, adding salt and pepper to taste.
