Arriving in Britain as early as the 16th century, carrots have become well known for their cleansing effect on the blood and liver, and for their ability to aid vision. Carrots contain high levels of beta-carotene which, besides giving them their reputation for aiding vision, also promotes healthy digestion and protect against cancer. Carrots are also full of antioxidant vitamins A, C, and E, helping to fight heart disease. They are recommended for liver problems, increasing red blood cells and treating jaundice, as well as eczema. Their chromium content can help to stabilize blood-sugar levels.
